Healing Chicken Soup

There is quite literally nothing better than a healing chicken soup when you're not feeling good. We have everything we need to heal ourselves from foods grown in the ground - and this soup is filled with so many of those nutrients.


Ingredients

  • 4 bone in chicken pieces (legs or thighs)

  • 5 cups of water

  • 3 large carrots

  • 3 stalks of celery

  • 1 yellow onion

  • 4 crushed garlic cloves

  • 1 small knob of ginger

  • 1 small bunch of rosemary

  • 1 small bunch of thyme

  • 1 small bunch of parsley

  • 1 tablespoon of turmeric

  • 1 tablespoon of cayenne pepper

  • 1 teaspoon of olive oil

  • Juice of half a lemon

  • Salt/Pepper/Paprika


Recipe

  1. Start by seasoning your chicken with salt, pepper, paprika, cayenne and turmeric. In a large dutch oven or soup pot, add olive oil and sear chicken on both sides. Remove chicken and let cool slightly before shredding the meat from the bones.

  2. In the same pot the chicken was cooked in, add the chicken bones, water and herbs and bring to a boil. Reduce to a high simmer and cook for about an hour and a half. (To save time, avoid this step entirely and use chicken broth - I prefer to make broth myself but both work!)

  3. After straining the bones from the liquid, start sauteeing your veggies. Onions and carrots first, then garlic and ginger, and lastly the celery (I like a crunchier celery). Pour in the broth and bring to a boil - then down to a simmer.

  4. Toss in the shredded chicken and the herbs and cover with a lid for about an hour and a half.

  5. Right before serving, add in the juice of half a lemon.
